Aflatoxins are naturally occurring toxins produced by certain fungi, mainly Aspergillus flavus and Aspergillus parasiticus. Several types of aflatoxins (B1, B2, G1, and G2) are produced by these fungi. The B1 form is recognized by the International Agency for Research on Cancer as one of the most toxic and carcinogenic substances found in nature. 1 These aflatoxin-producing fungi can contaminate several dozen food commodities, including many of Africa’s important staple crops: maize, sorghum, millet, rice, oilseeds, spices, groundnuts, tree nuts, and cassava. 2
